Tea plants are covered 20 to 30 days before harvest to avoid direct sunlight. This increases chlorophyll production and amino acid content, which gives the plant a darker green hue.

In addition, to ensure the best quality, only the first leaves of the plants are harvested, that is to say the most tender young tea leaves.

After the tea leaves are harvested, the stems and veins are removed and the leaves are ground into a fine powder called ''matcha''.
